It's beginning to look a lot like Christmas...on the farm!

Hope everyone had a blessed Thanksgiving! I'm sorry I didn't get a newsletter out the last two months, things have been a little busy here on the farm.
|
First of all some updates, all cuts of pork will be back in stock in January, lamb will be back in stock in March. We have everything chicken in stock along with a few miscellaneous cuts of turkey. Ground turkey will be in stock next week.
|
We raised a total of 26 pastured turkeys this year, 22 were sold whole to grace holiday tables, the remainder went into cuts and ground turkey. Due to the demand, we plan to raise twice this number next year. Reservation information for 2018 turkeys will be forthcoming.

Half of this year's group of pigs was harvested this month, these were pre-ordered in whole or half hog quantities, the remaining 3 will be processed as soon as possible after the new year for retail cuts. As soon as the remaining pigs are harvested, we plan to start the next group so pork will be consistently available.
|
Because Gulf Coast sheep grow slower than other modern meat breeds, we have made the decision to process our market lambs in March so they can get bigger before harvest. As we continue to enlarge our flock, we plan to start lambing twice per year, spring and fall, to improve lamb availability.
